There is such a thing as plain text

People have claimed that there is no such thing as plain text. The idea is that when you have bytes, you don't know how to interpret them without knowing what the encoding is. Since then, however, utf8 has been much more widely accepted. It think at this point we can say: there is plain text, and it is encoded in utf8.
